One of my favorite comfort dishes.
Since I received my ancestory DNA results, I’ve been looking for recipes to try from each piece. I found a version of cottage or shepards pie since I am 16% scottish and 3% Irish.
There are so many veggies in this dish!
1 tbs ghee
2 lbs ground beef
2 garlic cloves minced
1/3 cup chopped carrots
1 cup mushrooms
1 can green beans
1/2 cup chopped onion
2 tbs tomato paste
1 cup beef broth
1 tsp salt
1/2 tsp pepper
1 1/2 tbs Italian seasoning
1 tsp thyme
1/2 tsp xanthum gum or tapioca flour
Ground Beef filling:
Parsnip mash:
1 1/2 lb parsnips
1 lb turnip
1/4 cup ghee
1/2 cup chicken stock
1 tsp salt
Preheat the oven to 400゚
Make parsnip mash and set aside
Add the Ghee onions and garlic to the skillet and cook for 4 minutes
Add Is a ground beef and cook until Brown
Add the chopped carrots mushrooms and green beans and cook for another 4 minutes
Add the beef broth tomato paste flour and spices and mix into the meat mixture
Bring to a simmer and stir for 5 minutes
After you Layer the meat mixture and parsnip mash place in the oven for 25 to 35 minutes for the last 3 minutes turn on the broiler
Serve and enjoy!
